Saturday mornings are for family time these days. The Mister and my schedules have changed in the past few months and its been amazing to be home together on the weekends. One of my favorite things about Saturdays is breakfast. We make breakfast at home and sit down to the table together to eat and talk. JDub’s highchair comes right up to the table with us and we all enjoy that time together.
Depending on our mood we have eggs, fruit, biscuits, a little spinach (since veggies are good for you) and sometimes PANCAKES! Okay, so pancakes are my favorite and I would eat them everyday, BUT that might be overkill. So instead we save them for special family breakfasts. I like to dress my pancakes up a little bit, nothing too fancy. I love a delicious classic mix such as Aunt Jemima. The best part of this mix is that all you have to have is water to get your pancakes started. I like to add in some fresh blueberries to mine. Since we always have a variety of berries in the fridge this is the perfect was to dress them up and its’ super easy too!
All you need to make a special family breakfast complete with these amazing blueberry pancakes is, Aunt Jemima Buttermilk Complete Pancake Mix, water, fresh blueberries and Aunt Jemima Syrup.
I always buy an extra container of blueberries since so many get eatten up while were cooking! Everyone in our house loves blueberries. My favorite way to make pancakes is on a griddle pan. I spray it with non-stick spray first and let it heat up, on medium low before I pour batter on to it.
As soon as I see the first little bubbles appear I add my blueberries in. I don’t like to add my blueberries into my batter in the bowl because it turns you pancakes blue. Maybe that would be perfect for a color themed breakfast one day.
After the entire pancake has those fun little bubbles it’s time to flip it. The other side need to cook for about 30-60 seconds before you remove it from the heat.
Each bite is full of delicious blueberries! Top with a tab of butter and Aunt Jemima Original Syrup and they are the best. I know my family sure loves them.
Everything I needed for this breakfast was easy to find at my local Wal-mart. The pancake mix and syrup are on the shelf right next to each other on the cereal aisle.
- 2 c Aunt Jemima Buttermilk Complete Pancake mix
- 6 oz Fresh blueberries
- 1 1/2 c water
- Non-stick cookie spray
- Aunt Jemima Original Syrup
- Optional: Butter
- Mix together pancake mix and water.
- Wash berries
- Spray griddle pan with non stick cooking spray and warm over medium low heat.
- Pour desired amount onto warmed griddle pan
- Once batter begins to bubble (15 seconds) add 5-10 blueberries
- After batter has bubbles covering entire surface flip
- Cook remaining side for 30-60 seconds or until browned.
- Remove from pan and serve.
- Serve with butter and Aunt Jemima Original syrup.
