I had 1 tortilla left in the house and couldn’t figure out that I could make with us that lonely tortilla. Then it came to me, mini tacos! Toddlers love food that is their size and of course everyone loves TACOS! It’s something we don’t joke about here in Texas. Healthy mini tacos are so easy, you are going to make them all the time.
I took my lonely tortilla and using a kitchen glass cut out 3 mini taco shells. Ground tukey, chopped spinach leafs and a sprinkling of cheese make up this version of healthy mini tacos.
I’ve found that vegetable sticks sliced thin are eaten a lot faster, so slice up your veggies! I used my mini star cookie cutter to make the star mango and kiwi bites.
