One of our favorite snacks at home is Roasted Red Pepper hummus. I feel like we spend a small fortune on it every week at the grocery store. Even the little guy loves it. I decided that in an effort to save a few pennies I would make my own. Even better you only need a few ingredients that you probably already have around the house. So grab your food processor and let’s get to it.
You are going to need Mezzetta Roasted Red Peppers, a can of garbonzo beans drained, 2 tablespoons of peanut butter and a pinch of salt.
Once you’ve add them all to the food processor, puree into completely mixed.
We eat hummus with pretzels, vegetable sticks and even as a spread on sandwiches! To make it easier for snack time I filled small plastic cups with seal-able lids that can be grabbed on the go or added to a lunch box. Make sure you refrigerate the hummus when finished.
