Magical Rainbow Cupcakes for St. Patrick’s Day
These adorable magical rainbow cupcakes are so perfect for St. Patrick’s day! Even better they can be easily altered to a beautiful rainbow birthday party or spring theme. Today we are making them for St. Patrick’s Day and have added a few key details to stand out. My kids are ALL about the cupcakes these days and when they heard I was going to be baking today they pretty much camped out at my feet for the rest of the day until I delivered. It’s cute and fun that they love my crazy baked treats so much. Both kids are at a stage where they love to be in the kitchen helping and I try to accommodate helpers as best I can. They are both big fans of our learning tower which helps make their kitchen time smoother. Before we got started baking I gathered everything I was going to need so I’m not searching for random items later.
Magical Rainbow Cupcakes for St. Patrick’s Day
Box cake mix of your choice and wet ingredients
Once you have gathered everything you need you will prepare you cupcakes as directed on the package. When they are finished baking, place them on a cooking rack for faster cooling. Once cooled completely you are ready to start decorating.
Start by frosting each cupcake, you can frost with a knife creating a smooth look or a decorating tip like we did. I frosted a few with various techniques to determine which look I liked the best.
After frosted the cupcakes are ready to be decorated. Using the rainbow candy, cut a 3″ strip to place as your rainbow. I would place these a little closer to one side to make some room on the back.
Place your mini marshmallows around the base on each side of your rainbow to create clouds. Next you can place the chocolate gold coin on the back side of the cupcake. Make sure to push it down into the cupcake a little to secure it.
These adorable rainbow cupcakes can be altered by leaving the coin off and changing the frosting color to a light blue. Now you are ready for a Rainbow themed birthday party or a fun Springtime treat the kids will love.
