Mean Green Smoothie

I’m sitting at my desk, thinking about everything that needs to get done today. There are calendars and note pads scattered everywhere and I still need to take a shower. The little one is down for a nap (he’s transitioning to 1) and I’m trying to remember if I’ve eaten yet today. I’m fairly confident that I’m not the only one that has days like this. If there is one thing our entire family loves and is super easy, it’s smoothies. Drinking a delicious cold fruity drink during the hot Summer months here in Texas is perfect. I don’t want to get to caught up in tons of sugar though! We don’t drink cokes (recovering diet coke addict here), it’s mainly water for us. I decided that I would working on making a delicious green smoothie that we could consider healthy too.

I had to think about my favorite fruits and how they would taste with greens mixed it. Last month I tried a green smoothie at the gym and I instantly loved it. That’s part of what started this journey. Don’t be surprised if this sounds crazy, give it a try.

Ingredients
  1. 1 large Kale leaf
  2. 1/2 c. pineapple chunks
  3. 1 ripe avocado
  4. 1/2 c. ice
  5. 1/4 c. Rice Milk (any milk will work, this is just what we drink)
  6. 1 tsp. honey
Instructions
  1. Cut the stem off of the kale leaf and tear it into 3 pieces.
  2. Add all ingredients in blender and pulse until smoothie.
  3. Pour and enjoy.
Notes
  1. Protein powder can be added if desired.

    This sounds delish! I’ve never thought to add avocado to my smoothies but I looooove them so I’ll definitely try next time!

    Sounds good! I would sub baby spinach for the kale since I’m not a kale fan.
