Now that you know all of my favorite New Mom Essentials, its time to share something that I loved when I was a nursing momm, NO BAKE LACTATION COOKIES!
These are so easy to make and you will be ready to eat them within a few minutes (they are best when chilled) BONUS you can NOT feel guilty when you eat them because most of the ingredients in them are helpful in increasing milk production in nursing mothers. Make sure you are drinking plenty of water as well!
Here is what you will need:
2 cups old-fashioned oats
½ cup ground or milled flaxseed
3 tablespoons brewer’s yeast
1 cup peanut butter or almond butter
½ cup honey
1 teaspoon vanilla
½ cup dark chocolate chips
- In a large bowl, add all ingredients except for the chocolate chips. I mixed by hand but you can use an electric mixer if you prefer. Mix on low speed until mixture is well combined. Add in chocolate chips.
- Using a small cookie dough scoop, (2-tablespoon sized) roll into smooth balls and place on a baking sheet. Place in the refrigerator for 30 minutes or enjoy right away. Once the chilled, you can transfer them to an air-tight container and store in the refrigerator for up to 2 weeks.
