The Perfect Banana Bread // Life Anchored

This morning I woke up and it was freezing outside, okay maybe no quite freezing it was 34 degrees. If you are a native Texas girl that is cold enough for you to exaggerate the temperature. 

The little man is happily crawling all over the floor and I decide that its the perfect morning to bake. Amazingly enough I actually have everything on hand to make my favorite banana bread recipe. I get everything out and get to work. This banana bread recipe is my favorite because it is versatile, you can add walnuts (I did) or chocolate chips, or both. 
 
The only downside to this recipe is the wait! It takes an hour and twenty minutes to bake and then you need to let it sit for 30 minutes before you cut and serve it.

Ingredients
  1. 2 eggs beaten
  2. 1/3 cup milk
  3. 1 teaspoon lemon juice
  4. ½ cup oil
  5. 2 medium mashed ripe bananas
  6. 1 teaspoon vanilla
  7. 1 ½ cup sugar
  8. 1 ¾ cup flour
  9. 1 teaspoon baking soda
  10. ½ teaspoon salt
  11. 2/3 cup chopped walnuts and/or chocolate chips
Instructions
  1. Preheat oven to 340 degrees.
  2. Prepare your loaf pan by greasing and flouring the sides of the pan.
  3. In a large mixing bowl, beat eggs.
  4. Pour milk into a measuring cup, add lemon juice to the milk to let sit for 2 minutes.
  5. Add oil to eggs and beat again. Add milk and vanilla and beat again.
  6. Mash bananas thoroughly and add to eggs, oil and milk.
  7. In a separate bowl, mix sugar, flour, baking soda and salt together. Slowly stir into wet ingredients.
  8. Add in optional walnuts and/or chocolate chips.
  9. Pour into prepared loaf pan and bake for about 1 hour and 20 minutes.
  10. Let cool for 30 minutes before cutting and serving.

 I love to make this recipe for us to enjoy at home, but it also makes a great gift for friends, teachers or even a new neighbor. Housewarming gifts are a great way to get to meet the new people on the block and make them feel welcome. 
 
Lately bread is one of my favorite things to bake, I’ll make sure to share a few more recipes soon.

    Lani, this is by far the best Banana Bread that I have taste. I had made it two times, the first one was the traditional way as your recipe with added nuts. The second one I made was with the chocolate chips and cranberries. Both breads came out beautifully and It was a hit with family and friends, and I also follow your recomendation of giving it as a gift.
