This morning I woke up and it was freezing outside, okay maybe no quite freezing it was 34 degrees. If you are a native Texas girl that is cold enough for you to exaggerate the temperature.


- 2 eggs beaten
- 1/3 cup milk
- 1 teaspoon lemon juice
- ½ cup oil
- 2 medium mashed ripe bananas
- 1 teaspoon vanilla
- 1 ½ cup sugar
- 1 ¾ cup flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2/3 cup chopped walnuts and/or chocolate chips
- Preheat oven to 340 degrees.
- Prepare your loaf pan by greasing and flouring the sides of the pan.
- In a large mixing bowl, beat eggs.
- Pour milk into a measuring cup, add lemon juice to the milk to let sit for 2 minutes.
- Add oil to eggs and beat again. Add milk and vanilla and beat again.
- Mash bananas thoroughly and add to eggs, oil and milk.
- In a separate bowl, mix sugar, flour, baking soda and salt together. Slowly stir into wet ingredients.
- Add in optional walnuts and/or chocolate chips.
- Pour into prepared loaf pan and bake for about 1 hour and 20 minutes.
- Let cool for 30 minutes before cutting and serving.

Lani, this is by far the best Banana Bread that I have taste. I had made it two times, the first one was the traditional way as your recipe with added nuts. The second one I made was with the chocolate chips and cranberries. Both breads came out beautifully and It was a hit with family and friends, and I also follow your recomendation of giving it as a gift.
