August is the hottest month of the year here in Austin. It’s hard to avoid it, there are days that I seriously want to just stay in my amazing air conditioned home, with all the blinds closed to keep it as cool as possible. The struggle comes when it’s time to eat…we have to do it, but who wants to heat up the house with the oven. This is where the amazingness that is the slow cooker comes in. I have been trying to use my slow cooker more and more this Summer to keep from heating the house up. It allows us more time to adventure and hang out, and dinner is ready when we are. My favorite thing about this slow cooker is that it is programmable. So even if the meal only needs to cook for a few hours and not all day, I’m okay to plan my day. I thought I would share one of my family’s newest favorites, cheesy chicken broccoli and rice.
- 2 cans of Cream of Chicken Soup
- 3 c. chicken broth
- 1 c. shredded cheddar cheese
- 1 tbsp. Creole Seasoning
- 2 chicken breast
- Jasmine Rice
- 3 cups raw broccoli
- 1 cup of Greek yogurt
- Combined cream of chicken soup, broth, chicken and seasoning
- Cook in slow cooker for 1:30 on HIGH
- Add cheese and broccoli to mixture and cook for addition 30 minutes
- Cook jasmine rice per directions
- Pour chicken mixture over steamed rice and serve

Love the convenience of slow cooker meals! I can hardly get my kids to eat broccoli, but this sounds like a dish that I might be able to get by with since it’s cheesy and has other things that they like.
