Winter in Texas lasts about 4 days, its a bitter and nasty 4 days for those of us not use to it and then its over. Then its sunshine and back to 80 degree days like it never happened. So for those 4 or so days I like to stay cuddled up warm and eat lots of soup and hot foods. While still trying to stay on the good eating habits that I’ve been working on this pregnancy I recently stocked up on Progresso Light Soups, Chicken Noodle is my favorite soup of all time.
I didn’t want to have a bowl of soup solo this week so I whipped up an amazing not your everyday grilled cheese sandwich to go with it. Years ago I use to meet a friend for lunch regularly at this cute little deli where I discovered artichoke grilled cheese. I’m putting my own spin on it today and adding a few other yum goodies in.
Here is what you are going to need to whip up this amazing sandwich to pair with your chicken noodle soup.
1 c. frozen spinach (thawed and squeezed)
1/4 c. Chopped artichoke hearts
1 tbs. Mayonnaise
1/2 c. shredded Parmesan
1/2 c. shredded mozzarella
Mix together and make grilled cheese sandwich with mixture.
