I love to cook and I love to entertain, naturally the two go well together. Normally when I share a recipe with you its something that your kids will love and I fixed it with a family dinner or playdate in mind. NOT today, well you kids might like it but I made it with the intention that moms would really like it. The last few weeks we have had playdates on both Sunday afternoons and Mondays. My Monday friend, Jack’s Mom in Austin, know ALL the great places around town to eat and she has the inside track on where kids eat free on any given day so we usually explore the city together. Now our Sunday friends are pretty easy going too, but everything is busy with the weekend crowd so we usually stay close to home for meals.
This weekend I decided to change it up a bit from the usual grilled cheeses that I bust out for the kids and make us mommas a special lunch. It brutal hot so I wanted to stay away from any warm foods and decided to go with a fresh Summer Caprese Salad.
I made my shopping list which consisted of delcious stones fruits that are in season, peaches (fresh from Fredricksburg if you’re in the Hill Country), necterines, apricots and a mix of heirloom tomatoes, raspberries, figs, basil and Stella’s Cheeses fresh mozzarella.
Figs are one of my favorite fruits and I love when I can incorporate them into a dish.
The great thing about a Summer Caprese salad is that you can add anything you want into it. These are just my favorites. I sprinkled a little black pepper and course salt over the cheese and served it up. To say the least it was devoured in a mear minutes and the mommas loved it. I served a few other dishes as well that I will share soon. Enjoy!
